 What is a Wagyu?

A Wagyu is a Japanese breed of cow that has exceptional marbling qualities. It is known as Kobe beef when it comes from Japan.

What is so special about Wagyu meat?

In addition to exceptional marbling, Wagyu cattle, and grass-fed cattle in general, are high in Alpha Linoleic Acid, a major form of Omega 3 Fatty Acid. These are vital to your health and can not be produced by your body.

Do you sell Blue Heron meat?

No. We sell beef and pork.

What is the difference between Wet and Dry Aging?

Our beef is dry-aged for at least 21 days. Only 10% of all beef is processed in this way. Dry-Aging produces an exceptional, concentrated flavor but the process is significantly more expensive than producing the wet-aged beef that most consumers find at the grocery store.

Do you sell your beef by the half or the quarter?

At the present time, we do not sell by the half or quarter.

Is your beef Certified Organic?

No. Our meat is not certified organic.
Certified Organic is a legal definition and the standards are maintained and enforced by the USDA. Certified Organic does not mean that the food in question contains no synthetic substances. Frozen Vs. Fresh beef. Which is best?

If fresh beef hasn’t been cooked within 48 hours, it beef begins releasing its natural juices. In our opinion, the finest beef is dry-aged and is professionally flash-frozen. The dry aging process enhances the natural flavors of the beef and flash freezing and vacuum sealing maintains the integrity of the beef.

What is in a Blue Burger?

Blue Burger is strictly a brand name. Our Blue Burgers don’t have Bleu Cheese or any other substance in them. They are pure beef that is approximately 85% lean.

What percentage of fat is in your hamburgers patties and ground beef?

Our ground beef and hamburger patties are 85% lean. However, grass-fed beef is high in Alpha Linoleic Acid and other Essential Fatty Acids that have been associated with lowering LDL while raising HDL cholesterol.

What does Pasture Raised mean and what are the benefits?

Pasture-raised, grass-fed beef at our farm is raised in the open air on fresh grasses, legumes and pure water. Our cattle lives outside in the open air all year round.

What is finishing and why do you finish your beef with grain?

While grass-feeding produces an outstanding flavor and texture, we think that finishing our cattle for approximately 6 months on grain produces an exceptional final product.
